White tea has been described as the pinnacle of sophistication. This
rare and supreme tea has been enjoyed in China for thousands of years,
and it became very popular during the Song Dynasty (960-1279). White tea
is made from immature tea leaves that are picked in the early spring
before the buds have fully opened.
White teas are sometimes called “Silver Tips”, because the tea
is silvery white, with pale blue or green highlights. Silver fuzz covers
the buds of the tea leaves, and they turn white when the tea is dried.
The proportion of buds to leaves varies, and white teas contain the
highest proportion of hand-picked buds of all teas. The highest quality
white teas are “Silver Needles” and “White Peony”. “Silver Needles” is
made entirely from the largest downy buds, and “White Peony” is made
from the smallest buds. The leaves and buds undergo a minimum of
processing – the leaves are usually air-dried and steamed. The leaves
